Creamy Carbonara Sauce

I make a lot of tomato based sauces but every once and a while it's nice to have a cream based sauce. Today I was in the mood for a creamy pasta sauce so I decided to try a Carbonara recipe.




Ingredients:
1 - Large Onion
5 - Button Mushrooms
1/2 - Pound of Bacon
1 - Tsp Salt
1/2 Tsp Pepper
1 Tbsp Olive Oil
1 - Cup Whipping Cream
1 - Cup Zucchini spirals (not shown)
1/2 Cup Grated Parmesan Cheese
1/2 - Box of Fettuccine Pasta



Directions:
Dice the onion and add to a sauce pan.


Slice the onion and add to sauce pan.


Slice the Bacon and add to sauce pan.


Drizzle with olive oil then cook at 6/10 heat until the onion is translucent and the bacon starts to get crispy.


 Add in 2 cups of whipping cream (300ml shown but I needed to add more, 500ml)
 

Bring to a boil, then reduce to simmer and stir until thick. (lots of stirring is required)


Boil pasta as per directions.


Add the Zucchini spirals to the sauce.


Add the Parmesan to the sauce.


 Mix everything together.


Drain the pasta.


Plate the pasta.


Scoop the sauce on to the pasta and serve.
